This law provided that German beer could only contain water, barley, yeast, and hops. However, But Gose is also made with malted wheat and coriander. The Goslar River salty water was also used, giving the drink a unique salty and tart taste.

Before WWII, the beer was not made. Gose disappeared for a while after the war but made a comeback in 1949.. Friedrich Wurzler Brauerei is credited with saving Gose and brewing the sour beer until he died. Guido Pfnister, his stepson, then passed on his Gose-making skills to his Gose-making abilities. He continued brewing the beer until the 1960s, but only a few pubs sold the fermented beer. Pfnister died in 1966. Gose didn't appear again until 1986.
