Candy manufacturers produce their pralines a little differently around the world.

  • A hard chocolate shell with a softer, often liquid filling is included in Belgian Pralines..
  • French Pralines – a blend of almonds and caramelized sugar – are a combination of almonds and caramelized sugar
  • American Pralines resemble fudge and contain milk or cream, and are softer and creamier, mimicing fudge

Marshal du Plessis-Praslin, a French sugar industrialist who lived in Vaux-le-Vicomte during the 17th century, inspired the early pralines. Whole almonds were individually coated in caramelized sugar, making these first pralines resembled whole almonds.

Both sugar cane and pecan trees were abundant in Louisiana, where the French settlers took their recipe into Louisiana, an area of the United States where both sugar cane and pecan trees were abundant. New Orleans chefs substituted pecans for almonds, added cream to thicken the dish, and thus created what is now known as the praline throughout the Southern United States.
