The history of tacos predates the arrival of Europeans in Mexico... The native people of Mexico's lake region traditionally eat tacos filled with small fish, according to anthropological evidence. Bernal Diaz del Castillo, one of the Spanish conquistadors, chronicled Europe's first taco feast. In Coyoacan, Hernan Cortes arranged this meal for his captains. It's unclear why the Spanish used the word taco to describe this indigenous dish. One possible origination is the word ataco, which means stuff or to stuff.

The National Taco Council was established in 1964 by Roberto L. Gomez. In 1967, the council gave President Johnson a 55-pound taco.
