Scottish immigrants brought their tradition of deep-frying chicken in fat to the southern United States. Fried chicken was quickly becoming a staple in the American South following its introduction to the South. Over time, cooks introduced seasonings and spices to enhance the chicken's flavor.

Traditionally, the chicken is fried in lard. Corn oil, peanut oil, canola oil, or vegetable oil are also commonly used.
