Drying makes this nutrient-dense meat light and fluffy. After turning it into jerky, a pound of meat or poultry will weigh only about four ounces. Because the drying process removes the bulk of the moisture, properly prepared jerky can be stored for months without refrigeration. Bacteria can be prevented from growing by salt added to the meat before the drying process begins.

The term 'jerky' is derived from the Spanish word charqui, which comes from the Quechua (a Native South American language) word ch'arki, which means to fire (meat).

Traditional jerky is available in individual servings, gas stations, supermarkets, and variety stores around the country. For additional heat, they also have it in a variety of flavors and add spices for additional heat.
