The puddings we enjoy today as desserts are not what was traditionally thought of as pudding at ancient dinner tables, and not what was traditionally known as pudding at ancient dinner tables. The majority of medieval puddings were meat-based and seasoned with herbs and spices. They were usually served hot by even sweetened cooks. More than likely made puddings from grains or day-old bread with nuts, fruit, or meats by the end of the 18th century. They used these puddings to stretch meals for a large family.
